The Corbenic Bakery is actually two workshops. In the morning it runs as the bakery, in the afternoon it turns into the confectionery. Both workshops are joined by one co-worker and three residents, so the morning team is a different team from the one in the afternoon.
In the bakery we produce a variety of breads and rolls. There we work with traditional continental methods, using sourdough and yeast. The baked goods are delivered throughout the houses in the community and are sold through our village shop in Dunkeld. We also attend various farmers' markets.
The confectionery serves the whole of our community. There is enough work to do to provide the biscuits and cakes for all the tea breaks in the workshops and for different meetings held in the community.
We are not a certified bakery, but we do use use organic ingredients as much as possible.
